Cole Slaw
4 cups shredded cabbage
1/2 cup chopped green pepper
1/4 cup chopped onion
1/3 cup vinegar
1 tablespoon cooking oil
1 tablespoon sugar
1/2 teaspoon celery seed
1/4 teaspoon dry mustard
1/4 teaspoon salt
Mix all ingredients together and chill. Makes 6 servings.

Cranberry-Celery Mold
1 small package sugar-free gelatin (strawberry or cherry)
1 cup boiling water
1/2 cup cold water
1 tablespoon lemon juice
1 cup coarsely ground cranberries
1 cup chopped celery
Add boiling water to gelatin. Stir until dissolved. Add cold water. Chill until partly set. Add lemon juice, chopped cranberries, and celery. Chill until set. Makes 6 servings.

Easy Spring Salad
1-16oz can no-salt-added green beans
1/4 tablespoon chopped onion
1 tomato, chopped
1/2 cup fat-free Italian Salad Dressing
Drain green beans and combine with onion and Italian dressing. Chill for at least one hour before serving. Toss chopped tomato into salad before serving. Serve. Makes 6 servings.
