Black Bean Salsa
1 15-oz can black beans, rinsed and drained
1 cup chopped tomatoes
1/2 cup low sodium corn, drained
1/2 cup chopped onion
1 minced clove garlic
1 4-oz can green chilies, drained
1 teaspoon lime juice
1/8 teaspoon black pepper
Combine all ingredients and let stand in the refrigerator for at least 1 hour. Makes 3 cups.

Mix all ingredients together and chill. Makes approximately 4 cups.

Mild Garlic Marinade
2 tablespoons cooking oil
3 tablespoons wine vinegar
1/3 cup tomato juice
1/4 teaspoon salt
1 teaspoon paprika
1/2 teaspoon black pepper
2 cloves garlic, chopped
Mix all ingredients together. Cover desired meat in marinade and chill in the refrigerator for at least one hour. Grill, roast, broil, or bake meat as desired. Makes 3/4 cup marinade.

Ranch Style Dressing Mix
1 cup nonfat dry milk
4 teaspoons dried basil
2 tablespoons minced dried onion
2 teaspoons dried mustard powder
1 teaspoon garlic powder

Combine all ingredients in a bowl. Stir well. Store in an airtight container. To use: combine 1/4 cup of mix with 1/4 cup of water. Blend into 1 cup nonfat plain yogurt. Shake well before serving. One serving equals 2 tablespoons.
